Combine rice, water and butter (optional) in a pot, and bring to a boil.
Cover with a tight-fitting lid. Reduce heat to low simmer, and cook 15 minutes.
Remove from heat (keep covered) and let steam for 10 minutes. Fluff with fork and serve..
If rice is too firm at the end of cooking, it maybe necessary to add 1-2 Tbsp. liquid and cook longer.
Rice Cooker Instructions: To prepare in a rice cooker, use the same liquid to rice ratio.
Refrigerate for extended shelf life.

Sweet-Sticky Coconut Rice with Mango
Take a trip or stay home? For most, the choice is obvious. You want to travel the world, see the sights and taste the rainbow. Unfortunately, the reality of your bank account doesn’t always align with your dreams. On the bright side, you have this recipe to take you out of your element. Sweet, sticky coconut rice oozes with far-away flavor, so you can feel wanderlust and worry-free.
1 cup rice
1 can (13.5 oz) light coconut milk, divided
1/2 cup plus 1/3 cup coconut sugar
Dash Himalayan pink salt
1 mango, peeled and sliced
- Add all ingredients to a rice cooker and cook until done. Alternatively, cook rice on stovetop, according to package directions.
- While rice is cooking, add about 1/2 cup coconut milk and 1/3 cup coconut sugar to a small saucepan and simmer over medium heat. Stir frequently and simmer until thick and syrupy, about 20 minutes.
- Once rice is fully cooked, divide among 4 bowls and pour coconut sauce over top. Add sliced mango.
- Garnish with hemp seeds and whipped topping, or your own favorite toppings.
