Directions
Easily create a delicious Thai curry at home in just 10 minutes. Simply slow fry the paste with coconut oil, add coconut milk or coconut cream and your choice of protein. It's a quick and satisfying culinary experience that'll leave your guests wanting more.
Preparation: Open pouch, empty into pot, add one can of coconut milk, add protein or veggies and heat through.
Refrigerate after opening and use within 14 days.

Wintery Chicken Ramen With Ginger, Garlic & Spices

Wintery Chicken Ramen With Ginger, Garlic & Spices
- 1 pkg. Explore Cuisine Organic Brown Rice Pad Thai Noodles
- 1 Tbsp. olive oil
- 1-1/2 lbs. boneless, skinless organic chicken breast (cut into 1-inch chunks)
- 1/4 tsp. Selina’s sea salt
- 1/4 tsp. black pepper
- 3 tsp. minced garlic
- 2 tomatoes (chopped)
- 1 brown onion (diced)
- 1 chili (cut in half (optional))
- 1 pkg. Mike’s Organic Red Thai Curry Paste
- 1/2 tsp. turmeric
- 1/2 tsp. coriander
- 1/2 Tbsp. ginger (freshly grated)
- 2 cups vegetable broth
- 2 Tbsp. Sproud Plant-Based Milk
- 1 Tbsp. SunButter Organic Sunflower Butter
- 1 Tbsp. Bragg Liquid Aminos
- 1 Tbsp. Nutiva Coconut Sugar
- 1 Tbsp. lime juice (fresh)
- 1/4 cup fresh parsley (to garnish)
- Cook noodles according to package directions. Drain and rinse in cold water; set aside.
- In large pot over medium heat, heat olive oil. Add chicken, salt and pepper and stir-fry for 1-2 minutes.
- Add garlic, tomato, onion and chili, if using. Cook, stirring occasionally for 2 minutes.
- Stir in red curry paste, turmeric, coriander and ginger until fragrant, about 1 minute.
- Stir in vegetable broth, Sproud milk, coconut sugar, aminos and SunButter. Simmer and stir occasionally until well combined, about 5 minutes.
- Stir in rice noodles.
- Remove from heat and stir in lime juice; season with salt and pepper to taste. Garnish with fresh parsley.
