Beet Red Nice Cream Sundae
Dog days of summer got you down? “Beet” the blues with a bowl full of red nice cream. Typically, you’d prescribe yourself lots of naps and ice water to make it through the longest, hottest stretch of the year. Not anymore. Made with frozen bananas and nutrient-rich beet powder, this dairy-free sundae will make your ears perk and tail wag with excitement. Finally, less heat and a lot more treat!

Nice Cream
1 Tbsp. MRM Superfoods Red Beet Powder
3 frozen bananas, chopped
1 tsp. maple syrup
1 Tbsp. unsweetened almond milk
Toppings
1 Tbsp. granola
1 Tbsp. peanut butter or peanut powder, drizzled
1 Tbsp. shredded coconut
1/2 fresh banana, sliced
Handful of fresh or freeze-dried cherries

Directions
- In a food processor, add all ice cream ingredients. Mix on a low speed for a few minutes.
- Stop the processor, use a spoon to stir mixture and continue mixing on low speed until smooth and creamy.
- For best results, place in freezer for 20 minutes to allow mixture to fully set.
- When ready to eat, spoon nice cream into a bowl and top it off like a decadent sundae.
