Soft-Baked Cashew Butter Cookies

What’s more, they’re free from dairy, gluten, oil and refined sugar – and they provide a punch of protein! Cashew butter has its own beautifully unique flavor and deserves a place on your roster of ingredients for healthier baked goods.
Soft-Baked Cashew Butter Cookies
- 1 cup Bob’s Red Mill Paleo Flour
- 1/2 tsp. baking soda
- 1/4 tsp. ground cinnamon
- 3/4 cup coconut sugar (or date sugar)
- 1/2 cup Bob’s Red Mill Old-Fashioned Rolled Oats
- 1/2 cup raw cashews (chopped)
- 2/3 cup cashew butter
- 3/4 tsp. vanilla extract
- 2 pasture-raised eggs
- 4 Bhu Keto Bites - White Chocolate Macadamia Cookie Dough
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In mixing bowl, combine all ingredients except Bhu bites and mix until well combined.
- Add Bhu bites and use hands to blend into dough.
- Scoop approximately 1 tablespoon of dough per cookie and arrange on baking sheet.
- Bake 10 minutes until lightly browned.
