Banana-Nut Breakfast Bars

Everyone has those days, when you feel out of sorts, out of focus and totally out of your mind. Whatever is driving you nuts, embrace it. Going nutty can actually be quite rewarding. Case in point: these banana-nut breakfast bars, featuring almond milk, almond flour and whole raw walnuts. Each square provides 7 grams of protein and only 119 calories. If that doesn’t put your mind at ease, nut-thing will.

Banana and Walnut Protein Bars Recipe

Banana-Nut Breakfast Bars

Makes 16 bars
Macros per bar: 119 calories | 7 g protein | 13 g carbs | 5.3 g fat | 1.4 g sugar | 1.9 g fiber

Ingredients

¼ cup plain Greek yogurt
¼ cup unsweetened almond milk
1 large banana
4 egg whites
1 1/3 cup oat flour
½ cup almond flour
1 ½ scoops banana protein powder
¼ cup xylitol
2 tsp. baking powder
½ cup walnuts

Directions

  1. Preheat oven to 350 degrees F and line a 9” x 9” baking dish with parchment paper.
  2. In a food processor, combine yogurt, milk, banana and egg whites and blend until completely smooth. Pour wet mixture into a large mixing bowl.
  3. To the bowl, add flours, protein powder, xylitol and baking powder. Stir until well combined. Fold in walnuts until incorporated.
  4. Spoon batter into prepared baking dish, using a spoon to smooth down.
  5. Bake 22-26 minutes, or until sides turn golden brown. Slice into 16 even squares and serve immediately.
