Cloves were found in a ceramic vessel in Syria with evidence that dates the vessel back to the third century BC. Muslim traders from the Middle East first discovered cloves. The highly priced spice was traded like oil. The traders made their way to the Arab Peninsula and from there to Africa and Europe. Europeans like the Portuguese and the Dutch took turns to seize control over the spice trade in South East Asia and several wars waged over the control of the Maluku islands. The Dutch emerged victorious in the 16th century and held the Maluku islands for the next three hundred fifty years.

Halloween Chai Muffins (Gluten-Free)

Gluten-free flour mixes with fall flavors of cinnamon, cardamom, ginger and clove. Incorporating coconut oil, applesauce and maple syrup instead of processed sugars, dairy and dyes makes for a muffin more monsters can munch and every goblin will gobble up gleefully.

Halloween Chai Muffins (Gluten-Free)

  • 1 cup gluten-free all-purpose flour (or regular flour)
  • 1 Tbsp. cinnamon
  • 1 tsp. cardamom
  • ½ tsp. ginger
  • ¼ tsp. ground clove
  • ? tsp. black pepper
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • ¼ tsp. pink salt
  • ½ cup applesauce
  • ½ cup coconut oil
  • ¼ cup maple syrup
  • 1 Tbsp. egg replacer (+ 2 Tbsp. water, or 1 whole egg)
  1. Preheat oven to 350 degrees F. Line 12 wells of muffin pan with black paper cups.

  2. In medium mixing bowl, combine flour, spices, cream of tartar, baking soda and salt.
  3. Stir in remaining ingredients.
  4. Add 3 tablespoons batter per muffin cup.
  5. Bake 15-18 minutes until toothpick inserted into center of muffin comes out clean.
  6. To decorate, cut out bats with black construction paper. Tape bats to toothpicks and place into muffins.
