Goat Cheese & Cranberry Tarts

Perfect for holiday parties, the flavors encapsulate the season in a bite-sized, irresistible package. The best part? With only six ingredients, they're quick and easy to assemble, proving that culinary excellence can be simple.
Goat Cheese & Cranberry Tarts
- 1 pkg. puff pastry (defrosted)
- 1/2 cup goat cheese crumbles
- 1/2 cup dried cranberries
- 1/2 cup apricot fruit spread
- 1/2 cup pecans
- Rosemary sprigs
- Preheat oven to 400 degrees F. Line 6 wells of muffin pan with parchment paper.
- Slightly roll out puff pastry sheets with rolling pin. Cut into 6 1-1/2-inch rounds or squares.
- Gently place puff pastry pieces into wells of muffin pan, arranging to fit snugly.
- To each, add goat cheese crumbles, a sprinkling of cranberries, a dollop of apricot jam and a few pecans. Place rosemary sprig on top.
- Bake about 15 minutes, or until puff pastry is golden brown.
- Cool tart 5 minutes prior to serving.
