Baked Raspberry Donuts With Almond Icing (Gluten-Free)
Enjoy freshly baked donuts at home anytime in no time at all. Studded with fresh raspberries throughout, these sweet treats are topped with an easy almond icing and a fairy-sprinkling of rose petals. Baked donuts offer great flavor with much less fat than frying, and this recipe calls for cassava flour which makes these goodies gluten-free. Cassava flour is a great substitute for all-purpose flour that won’t sacrifice taste or texture. Have a spring fling with this flirty and flavorful recipe!
Baked Raspberry Donuts With Almond Icing (Gluten-Free)
Donuts
- ¼ cup vegetable oil
- ¼ cup cane sugar
- 3 Tbsp. light brown sugar
- 1 egg
- 1 tsp. baking powder
- 1 cup cassava flour
- ½ cup almond milk
- ½ cup raspberries (washed, dried & halved)
Icing
- 1 cup powdered sugar
- ¼ cup heavy cream
- ½ tsp. almond extract
- ½ tsp. vanilla extract
Toppings
- Dried rose petals (optional)
- Fresh raspberries (optional)
- Preheat oven to 400 degrees F. Lightly grease donut pans or molds.
- In large mixing bowl, whisk together vegetable oil, granulated sugar and brown sugar.
- Whisk in egg followed by baking powder.
- Using silicone spatula, stir in half cassava flour followed by almond milk. Add in remaining flour and stir until no dry flour visible.
- Gently fold in raspberries.
- Spoon batter into donut molds until ¾ full. Smooth batter with the back of spoon.
- Bake 12-15 minutes or until light golden-brown.
- Remove pan from oven and let sit several minutes. Carefully remove donuts from mold and place on wire rack to cool.
- For frosting, in mixing bowl, whisk together powdered sugar, heavy cream and almond extract. (Note: If too thick, add more heavy cream 1 tablespoon at a time.)
- Dip one side of each cooled donut into frosting, allowing excess to drip off. Place donuts frosting side up on wire rack.
- Garnish immediately with dried rose petals and fresh raspberries (optional). Allow icing to dry before serving.
