Pancakes are a lovely (and loving) breakfast treat, but sometimes you don’t feel like standing over a hot griddle pouring and flipping on repeat while expectant faces vie for the first batch. Here’s where you call on the easy magic of the sheet pan. Preheat your oven, line a pan with parchment paper, make the batter and pour. In 20 minutes, all the pancakes are done at once! Baked Sheet-Pan Pancakes With Cinnamon Apples

Dry

  • 2 cups finely ground almond flour
  • ½ tsp. baking soda
  • ½ tsp. cinnamon
  • ¼ tsp. pink salt

Wet

  • 3 large eggs (room temperature)
  • 1 cup almond milk (room temperature (or cashew or coconut milk))
  • 1 Tbsp. date syrup (or honey)
  • ½ tsp. vanilla extract
  • ½ tsp. lemon juice

Optional Apple-Cinnamon Topping

  • 1 Tbsp. coconut oil
  • 1 apple
  • ½ tsp. cinnamon

Pancakes

  1. Preheat oven to 325 degrees F. Line 11x17 sheet pan with parchment paper and lightly grease.
  2. In large bowl, whisk together dry ingredients.
  3. In separate bowl, mix together wet ingredients.
  4. Pour wet into dry and whisk until fully incorporated.
  5. Pour batter into sheet pan. Use spoon or spatula to evenly distribute.
  6. Bake 20 to 25 minutes, until top is golden and toothpick inserted into center comes out clean.
  7. Use pizza cutter or knife to cut into 15 equal squares.
  8. Serve with choice of toppings, such as berries, apples, pears, figs, pomegranate seeds, nuts, seeds, coconut yogurt or chocolate chips.

Apple-Cinnamon Topping

  1. Slice apple in quarters. Remove seeds and stem, then finely slice each quarter lengthwise.
  2. In large skillet over medium heat, heat coconut oil and cinnamon. Swirl to coat bottom of pan. Add apples and cook on both sides a few minutes until lightly browned and soft.
  3. Spoon over pancakes.
