Orange-Cinnamon Rice Pudding

Using fresh oranges for juice and zest makes all the difference in flavor, and you can easily sub in coconut milk to make it vegan. Orange-Cinnamon Rice Pudding

  • 2 cups whole milk or coconut milk
  • 1/2 cup arborio rice or short grain rice (rinsed)
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 1 Tbsp. orange and lemon zest
  • 4 Tbsp. fresh orange juice
  • 1/4 cup coconut sugar
  • Sprinkle salt

Optional: 1 tsp. corn starch

  1. In medium saucepan, heat milk and vanilla on medium-low. Cook 10 minutes. Use wooden spoon to skim milk skin.
  2. Add rice and stir frequently for 5 minutes. Cover and cook 9 minutes or until rice thickens into pudding.
  3. Remove lid and add sugar, cinnamon, orange juice, half Tbsp. zest and salt.
  4. Stir frequently until pudding is desired consistency. If necessary, add corn starch to thicken.
  5. Pour into individual bowls and let cool.
  6. Top with cinnamon, additional zest and toppings of your choice.
