No-Bake Tropical Cheesecake Bars

This no-bake tropical cheesecake is sunshine in bar form, bursting with coconut creaminess and a tangy kiss of passionfruit. The crust — made with crispy puffed rice, coconut flakes and a buttery touch of ghee — is like a chewy, toasty granola bar that sets the stage for a dreamy, fruity filling. Blended with cream cheese, coconut cream, sour cream and just the right zing of lime zest, the cheesecake layer is rich, smooth and perfectly chilled. Topped off with a glossy passion fruit jam, it’s a cool, crowd-pleasing treat that tastes like a beach vacation — no oven required.
No-Bake Tropical Cheesecake Bars
Crust
- 2 cups puffed rice cereal
- 6 Tbsp. ghee or butter
- 1/2 cup brown sugar
- 1 tsp. vanilla extract
- 1/2 tsp. Himalayan pink salt
- 1/2 cup coconut flakes (unsweetened)
- 2 Tbsp. honey
Filling
- 2 cans coconut cream (unsweetened)
- 2 16- oz. packs cream cheese (room temperature)
- 1 cup sour cream (room temperature)
- 1/2 cup passion fruit nectar or 1/4 cup passion fruit preserves
- 2-3 tsp. agar powder or gelatin
- 1 tsp. vanilla extract
- 1/2 lime zest
- 1/2 - 1 cup powdered sugar
Jam Topping
- 1/2 cup passion fruit nectar
- 1 Tbsp. cornstarch
- 1/4 cup light brown sugar
- Prepare 11x7 baking dish with parchment paper.
- Excluding puffed rice, combine crust ingredients in a saucepan and cook until sugar melts. Remove from heat, then add rice cereal and mix well.
- Press mixture into prepared dish. Chill 25 minutes in refrigerator.
- Bloom agar or gelatin.
- In food processor or kitchen mixer, add cream cheese, sour cream, coconut cream, passion fruit nectar, gelatin, vanilla, lime zest and powdered sugar. Mix until well combined and smooth.
- Pour mixture on crust and smooth. Chill overnight for 6-12 hours.
Top with passion fruit jam and coconut flakes.
- Add ? tsp. cardamom to the filling for more flavor.
- Instead of rice puffs you can use oats, cookie crust etc.
- The more gelatin the firmer.
