Vegan Turmeric-Ginger Veggie Soup
Yields 8 cups
6 medium carrots, sliced ½-in.
4 small sweet potatoes, cubed
4 cups filtered water
1 can chickpeas
2 cloves garlic, sliced
1 inch fresh ginger, peeled with a spoon and diced
1 Tbsp. ground turmeric
1 tsp. pink salt
- In slow cooker, combine all ingredients.
- Cook on high for four hours, or low for six hours.
- Pour in separate bowls and garnish with fresh herbs.
