Garlic-ginger beef combined with golden vegetable “fried rice” makes for a quick, easy and ultra-satisfying dinner. The healthier take on veggie fried rice gets its golden color from turmeric, while the “rice” is simply riced cauliflower studded with colorful veggies. You can use fresh veggies, as outlined in the recipe, or pick up a bag of frozen peas and carrots to save time. Store any remaining servings in the refrigerator to reheat the next day – it’s just as delicious.

Cauliflower “fried rice”
- Add broccoli to one pan and cook 1-2 minutes. Add cauliflower rice. Cover and cook, stirring occasionally, for about 5 minutes. Season with salt and pepper to taste.
Garlic-ginger beef
- Meanwhile, add beef to other pan. Use wooden spoon to break it up into large pieces so it evenly covers the pan. Cook 4-5 minutes to brown. Then, use spoon to break everything up and mix it around so the other side of the meat is in contact with the pan. Cook for 1 minute. Check that it is thoroughly cooked throughout. If not, give it a stir and let cook another minute or two as needed. Season with salt and pepper to taste.
- To assemble bowl, spoon in cauliflower rice first, then add a serving of beef on top or on the side.
- To make the recipe even easier and quicker, instead of fresh broccoli and carrots, swap in a bag of frozen carrots and peas.
