Vegan Cream Cheese & Fruit Tortilla Wrap
Whip up a healthy fruit wrap for a sweet breakfast, lunch or snack. Vegan cream cheese made from almonds packs a plant-based protein punch while varied fruits burst with nutrition. Get the kids involved and they can layer theirs any way they like for a unique culinary creation. Roll ‘em up, fold ‘em or eat ‘em like a pizza!
Vegan Cream Cheese & Fruit Tortilla Wrap
Almond Cream Cheese
- 2 cups almonds (skinned and soaked for 8 hours)
- 1/4 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/2 cup water (plus 2 tablespoons)
- 1/2 tsp. dried basil
- 1/4 tsp. Redmond Onion Salt
- 1/4 tsp. garlic salt
- 5 tsp. lemon juice
Wrap
- 1 tortilla wrap
- 2 Tbsp. SunButter Sunflower Butter
- 2 Tbsp. sliced almonds
- 1/3 banana (sliced)
- 2 strawberries (sliced)
- ¼ cup blueberries
- In blender, combine all ingredients for cream cheese and process until completely smooth.
- On plate, lay tortilla. On one quarter, spread sunflower butter and top with blueberries.
- On opposite quarter, spread almond cream cheese and top with almond slices.
- Arrange bananas on third quarter.
- Arrange strawberries on last quarter.
- To eat, slice each section separately or leave whole and fold or roll.
