The biscuit-like dessert is typically found in holiday-themed tins with a swirl design or colorful sprinkles on top. But in this recipe, things are a little different. In lieu of white flour and butter, these cookies come with whole grains and whole tea leaves. The tea offers a subtle vanilla flavor that pairs well with almonds. The complete cookie ensemble comes together so easily, it’s sure to be a staple in your back pocket.
1-1/4 cups oat flour
2/3 cup granulated sugar
1-1/2 Tbsp. coconut oil
1/4 cup honey
1/2 tsp. Vitacost Organic Loose Vanilla Cookie Green Tea
1/8 tsp. almond flavoring
Whole almonds (or slivered almonds)
- Preheat oven to 350 degrees F. Coat a baking sheet with non-stick spray.
- In a medium bowl, mix together all ingredients until well combined.
- Roll dough into a log shape. Slice log into 1/4-inch-thick rounds.
- Place round cookies on baking sheet, top with whole or slivered almonds and bake 12 minutes. Once cookies firm up, they’re done.
