The creamy base consists of rich cashews and coconut milk yogurt. Dairy-Free Chocolate-Coconut Pudding
- 1/2 cup raw cashews
- 1 cup unsweetened coconut milk yogurt
- 2 Tbsp. honey
- 1 Tbsp. cacao powder
- 1 Tbsp. lemon juice
- 1/2 tsp. vanilla extract
- 1/4 tsp. Himalayan pink salt
Toppings
- Cacao nibs
- Unsweetened coconut flakes
- In food processor, process cashews until finely ground.
- Add remaining ingredients and process until fully blended.
- Spoon pudding into bowls and top with cacao nibs and coconut flakes, if desired.
