Use grass-fed beef, or for those on a plant-based diet, this dish can stand on its own without it, thanks to the plethora of protein-rich legumes throughout! This chili ensures generous portions, making it ideal for meal prepping or as the perfect addition to any holiday party or potluck.
Frontier Chili Pasta
- 1 pkg. chickpea pasta
- 1 yellow onion (chopped)
- 3 cloves garlic (diced)
- 1 lb. organic grass fed beef
- 1 cup cherry tomatoes (halved)
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 1/4 tsp. sea salt
- 2 celery ribs (chopped)
- 1 red pepper (chopped)
- 1 green pepper (chopped)
- 1 can (15 oz. kidney beans)
- 1 can (15 oz. pinto beans)
- 1 can (15 oz. tomato sauce)
- Bring large pot to boil and cook pasta according to package directions.
- In medium skillet, heat oil and add onion and garlic. Cook until browned.
- Add beef, cumin, salt and chili and cook until beef browns.
- Add tomatoes and cook 5 minutes.
- Add celery and peppers and cook 3 minutes.
- Add beans and tomato sauce, stirring occasionally, about 5 minutes.
- Drain pasta and add to chili mixture.
- Combine well and serve.
