Directions
Pancakes:

Gently whisk together egg, oil, and water together.

Fold in mix until combined. (Don't over-mix - lumps are okay!) 3. Cook over medium-high heat on a preheated, greased skillet for about 3 minutes per side or until lightly browned.
Waffles: Follow pancake instructions for batter, but double the water. Cook according to waffle iron instructions.
Make it Vegan: Replace 1 egg with 1/3 cup mashed ripe bananas.

Homemade Elevated Applesauce
This isn’t your baby’s applesauce. In this recipe, a grown-up glow-up elevates the traditional nutritional powerhouse to brunch-worthy. Here it’s left textural, with hints of lemon and vanilla – and don’t skip the cinnamon (because cinnamon will
forever be apple’s best friend). Galas, which are mildly sweet and crisp, were used in this recipe, but the sweetness depends on the type of apples used. For sweeter sauce, choose Golden Delicious, Fuji or Honeycrisp. Also, a pinch of your preferred sweetener is totally acceptable! Top granola, oatmeal or ice cream, or serve it with homemade pancakes or crêpes for a special treat.
Homemade Elevated Applesauce
- 3 cups peeled/diced apple (4 medium apples)
- 1-½ tsp. cinnamon
- 2 Tbsp. lemon juice
- 1 tsp. lemon zest (optional)
- 1 tsp. vanilla
- 2 Tbsp. water
- In medium saucepan, bring all ingredients to boil. Stir, cover and simmer for 25-30 minutes.
- Serve warm or chilled.
