Upcycled okara flour is the star ingredient in our Simple Truth™ Gluten Free Banana Bread Mix. This fantastic gluten free flour saves valuable resources like water and reduces CO2 emissions, making it the perfect way to mix some extra sustainability into your baking.
You Will Need:
1 package Simple Truth™ Gluten Free Banana Bread Mix
3 large eggs
1 1/4 cup over-ripe** banana mashed
5 Tbsp unsalted butter melted and warm
**For best flavor, banana peel should be covered in brown spots and black patches.
Position a rack in the center of the oven. Heat oven to 350°F. Grease a 9"x5" loaf pan or line it with parchment paper.
Pour all of the mix into a large bowl. Add eggs, banana, and butter and beat with an electric mixer on high speed for 1 minute.
Transfer the batter into the pan and spread evenly. Baked until a toothpick inserted comes out clean. 50 to 60 minutes, rotating the pan half way through the baking time. Let the loaf cool for at least 10 minutes before removing it from the pan. Serve at room temperature.
For Muffins: Grease or line a standard muffin tin with paper liners. Divide batter evenly among the cups. Bake until a toothpick inserted into the centers of muffins comes out clean. 15 to 20 minutes, rotating the pan half way through cook time.
