To use vanilla beans, split them in half using a knife and scrape out the seeds inside. use the seeds in baking and save the skins to create and extract of flavored sugar.


To use a vanilla bean, you need to split it in two, lengthwise, with a knife. This exposes the tiny black seeds and oils inside. Using the non-sharpened side of the knife, scrape the pod to retrieve the vanilla flavoring. You can also use the pods by adding them into a small bottle of vodka (or other alcohol), and allowing it to soak. After a few weeks the flavor will be extracted into the liquid, which can then be used the same way as regular vanilla extracts. Best of all, you can leave the beans in the bottle and continue to add vodka as it runs low.

Homemade White Chocolate

What is white chocolate? Is it really even chocolate? Surprisingly, it’s not. That’s because the main ingredient in real chocolate is cocoa solids. White chocolate doesn’t contain any cocoa at all (hence, its white color). Instead, a flavorless cocoa butter serves as the base. And a minimum 20 percent cocoa butter is all that’s needed to qualify the sweet treat as “white chocolate.” The rest is milk, flavorings and other fillers. If you want the real deal, try making it yourself. This vegan, paleo-friendly homemade white chocolate is free of high fructose corn syrup and genetically modified milk solids. It is, however, packed with healthy fats and protein – plus the kind of creaminess no one will ever question.


 1 cup unsalted cashews
1 lb. raw cacao butter
2 Tbsp. powdered coconut milk
1/2 cup maple syrup
1 vanilla bean, cut and scraped


1. Soak cashews for at least 1 hour.

2. Drain cashews and add to a food processor; process until smooth.

3. In a double boiler, melt cashews, cacao butter, coconut milk, syrup and vanilla beans.

4. Stir until well-combined, and then pour into an ice cube tray or mold of choice.

5. Place in the freezer until solidified, about 1 hour.
