Raisin-Free Oatmeal Cookies (Gluten-Free & Vegan)
Do raisins make you shrivel? These oatmeal cookies leave the raisins in the box while satisfying your craving for the distinct goodness of a brown-sugary favorite. Made lovingly with oats and gluten-free flour, they’re also vegan – pleasing many more cookie-munching monsters. Make them in less than 30 minutes!
Raisin-Free Oatmeal Cookies (Gluten-Free & Vegan)
- 1-½ cups quick oats
- ½ cup gluten-free all-purpose flour
- 1 tsp. cinnamon
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. Himalayan pink salt
- ? cup brown sugar
- ¼ cup sugar
- ½ cup applesauce
- ¼ cup coconut oil
- 1 Tbsp. egg replacer
- 2 Tbsp. water
- 1 tsp. vanilla
- Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
- In medium bowl, sift together oats, flour, cinnamon, baking powder, baking soda and salt.
- Stir in remaining ingredients until batter is fully mixed.
- Scoop 1 Tbsp. batter per cookie onto baking sheet.
- Using back of fork, gently flatten cookie to ¼-inch thickness.
- Bake 13 minutes until golden brown. Cool before eating.
