Caprese Chicken Skillet
Chicken is a staple in many households. Besides being versatile, it’s packed with protein and other vitamins and nutrients that play a part in good health. This simple-to-make skillet gives you all of the benefits of chicken with even more nutrients and bigtime flavor. The classic caprese combo – mozzarella, tomatoes and basil – pairs perfectly with chicken. And cleanup is a breeze with just one pan needed for the entire meal.
Caprese Chicken Skillet
- 2-3 boneless skinless chicken breasts
- 2 large tomatoes (sliced)
- 1 8 oz. fresh mozzarella ball, sliced
- 1 pkg. basil leaves
- 2 garlic cloves (minced)
- 1 Tbsp. butter
- Balsamic glaze
- Oregano
- Salt and pepper
- Olive oil
- Preheat oven to 400 degrees F.
- Season chicken with olive oil, salt, pepper and oregano. Let sit for 10 minutes at room temperature.
- In large skillet over medium-high heat, heat 1 Tbsp. of olive oil. Add chicken and cook 2-3 minutes, allowing it to brown and build a crust.
- After a few minutes, flip chicken. Add butter and garlic to pan. Top chicken with two slices each of tomato and mozzarella.
- Place skillet in oven. Bake 8-10 minutes or until chicken reaches 165 internally. (Note: If desired, place chicken under broiler for last 2 minutes.)
- Arrange chicken on plate. Drizzle with balsamic glaze and top with fresh basil.
