Caprese Chicken Skillet

Chicken is a staple in many households. Besides being versatile, it’s packed with protein and other vitamins and nutrients that play a part in good health. This simple-to-make skillet gives you all of the benefits of chicken with even more nutrients and bigtime flavor. The classic caprese combo – mozzarella, tomatoes and basil – pairs perfectly with chicken. And cleanup is a breeze with just one pan needed for the entire meal. Caprese Chicken Skillet

  • 2-3 boneless skinless chicken breasts
  • 2 large tomatoes (sliced)
  • 1 8 oz. fresh mozzarella ball, sliced
  • 1 pkg. basil leaves
  • 2 garlic cloves (minced)
  • 1 Tbsp. butter
  • Balsamic glaze
  • Oregano
  • Salt and pepper
  • Olive oil
  1. Preheat oven to 400 degrees F.
  2. Season chicken with olive oil, salt, pepper and oregano. Let sit for 10 minutes at room temperature.
  3. In large skillet over medium-high heat, heat 1 Tbsp. of olive oil. Add chicken and cook 2-3 minutes, allowing it to brown and build a crust.
  4. After a few minutes, flip chicken. Add butter and garlic to pan. Top chicken with two slices each of tomato and mozzarella.
  5. Place skillet in oven. Bake 8-10 minutes or until chicken reaches 165 internally. (Note: If desired, place chicken under broiler for last 2 minutes.)
  6. Arrange chicken on plate. Drizzle with balsamic glaze and top with fresh basil.
