This outstanding beef meatball recipe rolls together organic grass-fed beef, finely grated carrots, jasmine rice and a blend of flavorful seasonings including turmeric and cayenne pepper. Sear them in a pan for a moist and tender texture, creating a burst of delightful flavors. Ideal atop a bed of spaghetti with your preferred sauce, these versatile meatballs can be enjoyed in countless ways to suit your taste.

Carrot Herbed Meatballs
- 1 lb. organic grass-fed ground beef
- 1 lb. organic carrots (peeled and grated)
- 6 oz. cooked jasmine rice
- 1 large free-range egg (whisked)
- 2 Tbsp. gluten-free flour
- 1 tsp. turmeric powder
- 1 tsp. cayenne pepper
- 1 tsp. garlic powder
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1 Tbsp. avocado oil
- Place grated carrots in clean cloth or cheesecloth and squeeze out excess moisture. Set aside.
- In bowl, combine carrot, beef, rice, egg, flour and spices using your hands to knead mixture until mixed well.
- With wet hands, portion mixture into roughly 2-inch meatballs.
- In large skillet, heat avocado oil over medium-high heat. When oil is heated well, add meatballs (in batches if necessary) and brown on all sides, about 6 - 8 minutes.
- Serve as desired.
