When it comes to bite-sized chocolate pieces, not just any chunk will do. You need the kind that stops a sweet tooth in its tracks. Otherwise, you’ll end up with messy fingers and an empty bag. That would all be fine-and-candy if you were enjoying quality ingredients, but consider what most chocolate chips are made with: milk fat, soy lecithin, corn syrup and guilt.

Coconut Oil Chocolate Chip Cookies
Makes 2 1/2 dozen
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
1/4 tsp cinnamon
1/2 cup Vitacost® Extra Virgin Organic Coconut oil, melted
1/2 cup dark brown sugar
1/4 cup organic sugar
1 egg, room temperature
1 tsp vanilla extract
3/4 cup Vitacost® Semi-Sweet Chocolate Mini-Chips
1/2 cup chopped walnuts or pecans (optional)
Preheat oven to 350°F.
In a medium-sized bowl, sift together flour, baking soda and baking powder, salt and cinnamon. In a larger bowl, whisk together coconut oil and sugars; add egg and vanilla and whisk until well combined.
Slowly add dry ingredients folding them into the wet ingredients with a spatula or wooden spoon and continue mixing until combined. Stir in chocolate chips. Cover and refrigerate at least 30 minutes before baking.
Scoop out small (1 tbsp) balls of dough and drop onto parchment-lined cookie sheets. Bake for 9-11 minutes or until edges start to brown. Let cool before serving.

Vegan Fudge Frosting
Fudge frosting from a can... mmmmm, right? Not so fast. The stuff you buy in the store is likely loaded with partially hydrogenated oils and high-fructose corn syrup, which is a real bummer because it tastes so good when you eat it straight from a spoon. There's good news for cake bakers and dessert lovers, though: you can make your own fudge-flavored cake frosting with just a few simple ingredients! It's vegan, it's chocolate-y and it tastes even better on a spoon.
(Editor's note: This is 100% true. We tried this one straight from the bowl and never got around to actually frosting anything. Sorry not sorry.)
Vegan Fudge Frosting
2 cups Vitacost organic dark chocolate chunks
1 cup organic full-fat coconut milk
½ tsp. vanilla
2 Tbsp. coconut oil
2 Tbsp. coconut sugar or turbinado sugar
- In double-boiler, melt chocolate chunks. (No double boiler? No problem: add 1" water to a medium sauce pan, bring to boil. Turn heat down to medium once water boils. Place a glass bowl over boiling water, use an oven mitt to hold glass bowl.)
- Add chocolate chunks to double boiler/bowl and stir with a wooden spoon until melted. Stir in coconut milk until combined.
- Remove from heat and stir in remaining ingredients until smooth.
- Pour frosting into a glass bowl and cool completely in refrigerator.
- Frost your favorite cake or dip fruit slices into frosting for a treat. (Or eat straight from the bowl. We won't tell.)
