Easy Coconut Milk Eggnog
What’s the sweet and creamy beverage that comes around only at the holidays? Use your noggin’. That’s right! It’s eggnog! The festive, dessert-like beverage inspires warm fuzzies – and this recipe brings the merry without the dairy! It’s made with coconut milk, egg yolk, maple syrup and a blend of sweet seasonal spices. Customize it as you please: without eggs to make it vegan, and with or without dark rum. “Yule” all feel jollier after some sips from this cool cup of cheer.
Easy Coconut Milk Eggnog
- 2 13 oz. cans full fat coconut milk
- 4 organic egg yolks
- 1/3 cup maple syrup
- 2 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- 1/4 tsp. ground allspice
- 1/4 tsp. cardamom
- 2/3 cup aged dark rum (optional)
- In pot over low-medium heat, warm coconut milk, stirring in egg yolks until mixture thickens. Stir in maple syrup, vanilla and all spices.
- Refrigerate until cool.
- If desired, mix in rum before serving.
Note: Omit egg yolks for vegan nog.
