Cooked, lima beans develop a creamy, buttery texture that is at once comforting and slightly indulgent. But don't be fooled - they are still a key source of protein, fiber and essential minerals!
Sort & rinse. Cover with water and soak overnight. Drain. Bring 3 cups water and 1 cup beans to boil, reduce, and simmer 1-1½ hours, or until tender. Drain and serve.
• Mix with corn, garlic and vegetables for succotash.
• Puree with fresh herbs for a tasty dip.
• Serve with brown rice for complete plant protein.
