Dark Chocolate Sweet Potato Protein Muffins

  • 2 sweet potatoes (cooked and mashed)
  • 1 cup almond butter
  • 1/2 cup cocoa powder
  • 2 scoops egg white protein powder
  • 1/4 cup maple syrup
  1. Preheat oven to 350 degrees F. 

  2. In large bowl, mix all ingredients until smooth. In prepared muffin tin, pour batter evenly into each well and bake until toothpick comes out clean, about 15 minutes.
