Avocado Nice Cream

Dig into your cravings with this cool, green and creamy avocado “ice cream.” There’s no sugar overload here, and this treat incorporates plant-based yogurt (but feel free to use Greek yogurt if that’s your scoop). Made with ripe avocados and coconut cream, it’s smooth perfection as is, but add your favorite toppings if you’re feeling extra. Avocado Nice Cream

  • 2 avocados
  • Juice of 2 limes
  • 1 can (15 oz.) coconut cream (full fat)
  • 1 cup plant-based milk yogurt (or unsweetened 2% or full fat plain Greek yogurt)
  • Pinch monk fruit
  • Pinch sea salt
  1. In high-speed blender or food processor, blend ingredients into creamy texture.
  2. Transfer to loaf pan or muffin pan (for individual scoops) and freeze approximately 3 hours.
  3. Enjoy as-is or add toppings of choice.

Note: Serve immediately for soft-serve smoothie.
